Coconut Cream Pie

What you need: 

1/2 package (about 9oz) silken tofu (I use Nasoya Silken tofu)
1 15oz can of coconut milk
3/4 cup maple syrup
1 teaspoon vanilla extract
1/2 teaspoon coconut extract
1/4 cup cornstarch
1/4 teaspoon salt
1 cup water
2 Tablespoons agar agar flakes
prepared vegan pie crust

What you do: 

Boil agar and water. Simmer and stir constantly, until reduced to 1/3 cup.
Place all other ingredients together and blend well. Add the agar mix and blend again. Place in saucepan and bring to a low boil stirring constantly until a pudding consistency. (Blend again if lumps have formed) Pour into prebaked pie shell.
Garnish with toasted coconut. Let chill for 2 hours or more.

So I am confused.... when I made the pie it came out pretty rubbery, almost inedible. I thought that was because i used the agar agar powder, which is stronger then the flakes. Now I find out that the recipe WAS to be made with powder.

Any idea why it came out so rubbery? And why, when I added the agar agar powder to the water at the begining, rather than having something that I could let boil (as stated in the instructions), I had an instant pasty like substance?

dang, thats totally my fault w/ the agar POWDER.  :-\  I didn't even know there was flakes available until very recently. sorry.  :(

so that should be

AGAR FLAKES!  in the recipe. (admin edited per request to change "powder" in this sentence to "flakes")

I think that is probably the problem. I just read that agar agar powder is 3x as strong as the flakes, by dry measure.

:( I didn't have luck with this recipe. It came out kind of rubbery. Not completely inedible, but definitely not creamy like I had hoped.

When I added the agar agar to the water, it instantly became a thick pasty sort of thing -- there was no chance to boil it as instructed. Could this have contributed to the problem?

I was so excited about this pie....... oh well.

EO, this isn't my recipe, buy my guess is that you used agar powder and the recipe author meant for you to use agar flakes, although this isn't specified.  Agar powder is much more concentrated, and using 2 T agar powder would definitely make this rubbery.  I've made this same mistake myself in another recipe that didn't specify which agar to use.

Very good and quick to make. You can pour it in a dish and chill if you don't want the calories of the crust, which is what I did.The vanilla and cocoanut extracts are necessary; I didn't have any so I added some extra coconut flakes, and cinnamon. It was good, but the extract would make it sing.
