Chik'n Stew and Dumplings

What you need: 

1/2 cup vegetable oil
1 medium onion, chopped
4 carrots, chopped
2 stalks celery, chopped
7 cloves garlic, minced
16 ounces chik'n strips, defrosted, rinsed, and chopped
1/2 cup flour
1/4 cup soy sauce
4 teaspoons nutritional yeast
32 ounces vegetable stock
4 potatoes, chopped
2 bay leaves
1/2 teaspoon dried sage
1/2 teaspoon salt
1/4 teaspoon pepper Dumplings:
1 cup flour, sifted
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon dried parsley
1/2 cup nondairy milk (I use soy)
2 tablespoons vegetable oil

What you do: 

1. For stew, add vegetable oil to the bottom of a dutch oven or large stock pot over medium heat. Add onion, carrots, and celery and heat for 5 minutes, stirring occasionally. Add garlic and chik'n strips and heat another 5 minutes.
2. Add flour and heat for 2 minutes stirring constantly to lose the raw flour taste. Add soy sauce and nutritional yeast and stir again to combine. Add vegetable stock, potatoes, bay leaves, sage, salt, and pepper.
3. Heat until boiling. Reduce heat and simmer for 60 minutes or until vegetables are fork tender. For dumplings, combine sifted flour, baking powder, salt, and parsley. In a separate bowl, mix together milk and vegetable oil, and then add these wet ingredients to the dry ingredients.
4. Dump the dumpling dough onto the stew with 6 spoonfuls. To help with this process, dunk the spoon into the hot stew mixture before each spoonful of dough. This will help the dough slide off the spoon easier.
5. Cover and simmer for about 15 minutes. The dumplings will lose their glossy shine once they are done. Remove the bay leaves before serving.
Source of recipe: I come from a family of meat-eaters, so I've had a lot of stew in my days. This recipe is a variation on family recipes combined with a vegan gravy recipe I learned some time ago.

I needed some dumplings to put onto a veggy soup and these were great!


Nice comfort food!  The only thing I might change is the size of the dumplings, but it all tasted very good.


This is a great winter food (or comfort food). I made it using Seitan and it was great! Nice sauce. I will definetly make it again!


Just got off the phone with Grandma, and she gave me another tip.  The way to make sure that dumplings are super awesome is to make sure that you don't "dump" the dumplings into the broth.  Try to gently "place" the dumplings on top so that they do not get covered in the sauce.  Apparentlyn the name dumpling is a misnomer...perhaps placlings?  ;)b
