Chik'in Ala King

What you need: 

10 oz chicken style seitan, break into small chunks
1 cup sliced mushrooms
4 tablespoons vegan butter/margarine
4 tablespoons flour
1 cup plain soy milk
1 cup vegan broth (veggie or un-chicken broth)
4 pieces of toast (rye or wheat is yummy)
1/2 teaspoon salt
1/2 teaspoon black pepper

What you do: 

Saute mushrooms in vegan butter.
Blend in flour, salt, and pepper to make a paste.
Slowly add soy milk, followed by broth to make a creamy sauce. Bring to a boil while stirring.
Add seitan chunks to heat (just a few minutes).
Pour sauce mixture over toast.

SO HOW'D IT GO?

Thank you so much for this recipe!  It was really weird how this tasted like ACTUAL chicken a la king, just not as salty. ;)b
Chicken a la king was a favorite dish of mine growing up, but my mom didn't make it very often.
My mom always put chow mein noodles in it, hence the chow mein noodles that are mixed in (see photo).

I only made a few slight variations.  I too added some pimento, but I also added green pepper and a little bit of garlic and onion salt.  I used Morning Star chick'n strips instead of seitan.

Again, thank you so much for this recipe.  It is seriously one of my favorites! :)

This was pretty tasty and quick to make.  I modified a bit by sauteeing some chopped onions with the mushrooms and also added peas and pimento to the final mixture as that's the way I use to make a la king.  I served it over rice.  Will definetly make again!
