Chayote & Lotus Root with Curry Paste

What you need: 

1 small onion, minced
1 garlic clove, minced
2 teaspoons curry paste
1 lotus root, peeled and cubed
1 chayote, peeled and chopped
1 to 1 1/2 cups mushrooms, diced

What you do: 

1. Fry onion and garlic in pan until golden. Add curry paste and mix well.
2. Add lotus root. After 2 minutes , add chayote. Let simmer for about 10 minutes.
3. Add mushrooms. Let simmer for another 2 minutes.
Serve over rice, couscous, or in a pita as a sandwich.
