Chai Applesauce

What you need: 

2 cups water
small chunk fresh ginger
2 teaspoons lemon juice
1 teaspoon vanilla, optional
1 chai tea bag
2 red delicious apples, finely chopped (with or without skin)
2 teaspoons sugar free syrup (or maple)

What you do: 

1. Bring water to a boil. Add ginger, lemon juice, and vanilla and let boil for about 5 minutes.
2. Add chai tea bag, and take out after about 2 or 3 minutes. Add apples. Let this boil for about 10 minutes.
3. Reduce heat and simmer for 45 minutes to 1 hour. Apples are done when they are very soft and look like they are ready to fall apart.
4. Drain apples, but save the left over liquid. Blend apples and syrup in a food processor and add left over liquid as needed. Chill, or eat warm!

SO HOW'D IT GO?

mmmmmmmmmmm!!!!!
My blender was a little too quick with this, and I ended up with baby-food smooth applesauce, which is OK, but I would have liked a bit of chunkiness to it.

Also, with the chai apple water that this was soaking in that I didn't use, I turned into a warm quasi-apple cider!  Double yum!  What a great idea to add the chai spices!
