Cauliflower Poppers

What you need: 

1 large head cauliflower, chopped to florets
juice of 1 lemon
3 cloves garlic, minced
2 teaspoons Dijon mustard
1 tablespoon olive oil
1 teaspoon salt
1 teaspoon dried dill
fresh black pepper, to taste
2 tablespoons nutritional yeast

What you do: 

1. Preheat oven to 400 degrees F. Whisk together the remaining ingredients.
2. Toss with the cauliflower.
3. Bake for 40 minutes, stirring once about halfway through the cooking time.
They're ready when they get nicely browned and they're tender but not mushy. I like to leave mine in until they get chewy blackened parts, but that's just me.
These are soooo good - sometimes when I want a light dinner I'll just make a batch and eat it all myself, easily as good as French fries!

SO HOW'D IT GO?

Mine always come out mushy.  They're wonderful, but they're mushy, and I have to eat them with a fork.  I feel like I'm doing something wrong.  Anyone know what the problem is?

Or are they typically fork-foods? 

Yes, I always use a fork.  "Poppers" makes it sound like a finger-food or something, but really, it's the texture of cooked cauliflower...

these are sooo good.
i made some changes, but nothing too major.
i like to enjoy the whole head of cauliflower for dinner if i make these.

The first time I made this recipe I ate the whole cauliflower, too, and I thought my intestines were going to explode!  Stupid lessons in moderation!

I found this recipe to be flavorful. Even my husband, who is very picky when it comes to most vegetables, liked it. The only thing that I might change next time is that I'll use less salt, as the poppers were a bit on the salty side.

gom gom gom gom... can't type or talk.... mouth and hands full of poppers.. nommmm... (i added a little agave to it and they are very. good.)

I loved these!!!! I use half a head of cauliflower and keep the coating the same, sans dill.
My 16 mnth old adores these too!

So good!  I follow the recipe most of the time or add seasoned breadcrumbs...either way it's delicious!
