Cashew Cream

What you need: 

4 ounces raw cashews
1/2-2/3 cup water, as needed
small dash maple syrup
drop vanilla extract

What you do: 

1. Whiz all the ingredients around in a food processor, scraping down the sides as necessary.
2. Adjust consistency and flavor by using more or less water and/or sweetener and vanilla.
This is an easy and deliciously wonderful, dairy-free alternative to cream. A food processor is essential. Most excellent served with cake.

SO HOW'D IT GO?

Has anyone used raw sunflower seeds instead? I have seen several recipes where you can substitute sunflower seeds for cashews without a real big difference in taste. Just wondering, please let me know. Thanks

This is amazing!  I use it with peach-strawberry cobbler and it's so decadent.  I don't soak the cashews and it works just fine.  Make sure to blend for a very long time to make it as creamy as possible!

With almonds it doesn´t get as nice an smooth as with cashews. But I heard it works with pine nuts, but I never tried.

has anyone tried this with other nuts?  (my boyfriend is allergic to cashews)

This is delightful, as is.  Today I added raspberry preserves in lieu of maple syrup (a tablespoon or two) and it took it to a whole new level.  MMmmm, over chocolate pudding.

This is going to be my new whip cream replacer.  It was really good.  I sped up the whole process of soaking the cashews by soaking them in hot water for a few hours.  I served this with vanilla cake and topped with freshly roasted cashews (I had some left over).  This would also be really good with fruit.

jessesmum:  it's perfect with desserts, cake and the like.  but, coffee?  ah, no.  the recipe produceses around 1 cup of cashew cream. 

idioglossia: i have never soaked the cashews and it has always been excellent, but might try that one day.

:)  This stuff is super-delicious. I soaked the cashews overnight, and I swear that plumped. The next day I put them in the blender, added a little water, vanilla, and agave, and WOW! Fabulous! I will definitely make this again.

I haven't tried this particular recipe, but the one I use says to soak the cashews overnight and then thoroughly drain--and this is key!  Makes a most decadent non-dairy cream.
