Cashew Alfredo Sauce

What you need: 

1/2 cup raw cashews
1 1/2 cups boiling water (best to use starchy pasta-cooking water)
1 teaspoon fresh lemon juice
1-3 garlic cloves, to taste
1 tablespoon olive oil
2 tablespoons nutritional yeast
salt and pepper, to taste

What you do: 

1. Place raw cashews (not roasted!) in a food processor and pulse until nuts are very fine. Carefully add in the boiling water; process until smooth.
2. Add the lemon juice, garlic, olive oil and nutritional yeast; process again until smooth.
3. Adjust seasonings with salt and pepper.
It's in the blending process that the sauce thickens, which is why using starchy water is your best bet, so it takes a while. If it isn't thickening enough for you, heat it in a saucepan over a low temperature for a few minutes, and that should do the trick.
Serve over cooked pasta. I like some steamed broccoli and red bell peppers added to mine.'

I make this Alfredo all the time, it's amazing! I do make a lot of modifications, though. Firstly, I always have homemade cashew milk around so I omit the cashews and use 1 1/2 cups of cashew milk in place of water, I also add 6 cloves of garlic instead of just 1, about 1 1/2 cups chopped mushrooms and half a bell pepper (that I saute with the garlic). I use 3 tbs NY, and 2 tbs flour for thickening. Chopped fresh basil is also very good added to this.

Here's the method I use:
Saute the garlic, mushrooms, and bell pepper in skillet, set aside. Mix together the milk, yeast, flour, lemon juice, salt, and pepper in medium sized sauce pan and boil until thick, add the mushroom mix (add basil here, if using) and pour over pasta. Only takes me about 30 mins, total.


Loved this recipe!  Super fast to make and although I did tinker with the seasonings, it was just so yummy.  I increased the garlic to about 7 cloves of garlic and added a basil and garlic herb blend, but next time I think I will add more seasoning, maybe some red pepper flakes, and more lemon.  My husband could not figure out what it was and was surprised that it was made from cashews.  I agree with the consensus that if you think it is bland -- add more seasonings and trust your own palate.  You might want more pepper or garlic than the next person, but it is your sauce so enjoy.

We had a half pint of cashew cream sitting in the fridge for a week . By adding a ladle of pasta water and everything but the lemon it was thirty minutes from recipe to mouth. Served over sundried tomatoes including the soaking water, angel hair and steamed broccoli. Oh yea, about 6 cloves of garlic. Yum, the rest will make a great lunch!! 


I made this tonight and it was just perfect.  The only extra I added was another clove of garlic and as I used plain water i added 3/4 tsp of arrowroot.
I served it with pasta and mushrooms and onions that I'd slowly cooked down in vegan butter.  Due to the arrowroot I simmered the  sauce for 5 -10 mins to thicken it but but I don't actually think it was needed as it was like single cream when I poured it in which is perfect imo and I actually ended up adding more water in!
This was so simple and quick to make I can tell I'm going to be making it a lot and using it as a base for other things.  The best thing for me is my 2 year old daughter who has been off her food lately not only had seconds but thirds!!! So thank you, thank you, thank you and you are now my new favourite person!!!


This came out very nice!  I added some Italian parsley to the sauce and also mixed in some sauteed mushrooms; both of which seemed to be a good addition.  Everybody really liked it!  Ill probably make it again and try some other vegetable additions.


This was dee-lightful and different!! ;)b I added 2 cloves of garlic, a little bit of garlic salt, and black pepper(I like garlic if ya couldn't tell haha). At first, I couldn't get the sauce to thicken for some reason so I left it on the stove. By the time I was finished gobbling up my pasta, the sauce had thickened!

Amazing! (Just See Photo by Sally Gomez). Question: Can you free this? I want to keep a giant surplus around so I can stop buying vegan mac n cheese in a box. Does anyone know?
