Carrot Salad
What you need:
3 1/2 cups of carrots
1 cup of raisins
1 cup of walnuts
1/2 cup of Vegenaise
1 tablespoon lemon juice
1 1/2 inch piece of ginger, peeled and diced
What you do:
Put all ingredients into a food processor. I usually dish it out into 6 individual servings and take one to work with me everyday.
