Carrot Fries

What you need: 

3 large carrots, cut to 3" pieces
2 tablespoons oil (I used sesame)
salt and pepper, to taste
chili powder, optional

What you do: 

1. Preheat oven to 375 degrees F. Cut the carrot pieces in half the long way (so they look like fries) with a crinkle cutter.
2. Mix carrots with the oil and set on pan. Sprinkle the salt and pepper on along with chili powder, if using.
3. Put in the oven for15 to 20 minutes.

great recipe! thanx!!!! i made them without oil, just with a bit soy sauce and that works as well pretty good! i added some basil and oregano... very good! the easiest way for eating warm carrots and also fast. i love carrots, just was too lazy to cook ´em plus they loose their taste while cooking too much in my opinion. this way it stays better.

I made these the other night for a vegan potluck, and they turned out pretty well! I didn't use oil, but a canola oil cooking spray, and seasoned with mrs. dash. they smelled great in the oven, and tasted nice too. not quite like potato fries, but they're carrots... I didn't expect them to taste like potatoes.

they were all eaten up, and that's a great thing - especially for me, an amateur cook!

i cooked these as an alternative to the good ol' vegan standby, french fries and don't get me wrong--they still tasted like carrots--but they were pretty good. next time, i'm going to add some more spices: mrs. dash, spike, italian seasoning, maybe? but they're tasty, as is. my omni boyfriend suggested a ketchup-nayonaise dipping sauce, which worked well with the sweet taste of the carrots. i also cooked them with onions (as suggested above,) and found that that took away some of the sweetness. overall, carrot fries are a nice change and are so easy to make that this recipe is worth keeping.

The carrot fries were divine - a keeper! We are carrot lovers (surprised we're not orange yet!), and loved the spicy fries, that resemble somewhat like sweet potato fries. Easy to make, because just sliced lengthwise baby carrots and then popped them in the oven! Used like half a bag of a big carrot bag, and had leftovers. Chili powder really good, and could add cayenne, garlic, or a little cumin for different flavors.

Mmm, yummy.
I only had 1 carrot so i cut up some cucumber, but the carrot ons were better.
I used olive oil, mrs. Dash, onion powder, and a liiitle bit of chili powder.

I make these again once I get more carrots!

Really, really good. Even my veggie hating boyfriend liked them.  Hard to believe something so simple could be so tasty!

This sounds yummy :P I am trying to cut back on white potatos. This will be fun to try! I am also new to the whole vegan life style.
