Carrot Cake Muffins

What you need: 

1-3/4 cups gluten-free flour blend or regular flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
1 cup applesauce (or 1/2 cup mashed banana & 1/2 cup applesauce)
1/2 cup sucanat sugar
1/4 cup maple syrup
1 teaspoon vanilla extract
1 cup grated carrot

What you do: 

1. Preheat oven to 350 degrees Fahrenheit.
2. In a bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
3. In another bowl, combine applesauce, sucanat sugar, maple syrup, and vanilla extract.
4. Thoroughly mix flour mixture into sugar mixture, then carrot.
5. Spoon batter into greased muffin tins. Bake for 26 minutes, or until an inserted toothpick comes out clean.

SO HOW'D IT GO?

oo these are good! i used brown rice flour and followed the suggestion of using 2T of brown rice syrup and it was still a little too sweet for me. will be making these again! :)

;)b Great recipe. I only used 2 T. of brown rice syrup in place of the 1/4 c. of maple syrup and they were still plenty sweet. Next time I may add cloves, raisins, or walnuts, as I think any would compliment these nicely. Thank you!

Wow this was really good, I had to use up some carrots so I decided to give this a shot. I hardley got the chance to follow this recipe how it was listed though:
I didn't have nutmeg and used some mocha cappuccino sprinkles instead.
I used regular oil instead of apple sauce because we were all out
I didn't use any vanilla at all
Instead of sucanat sugar I used half raw and half plane white sugar.
I also used whole wheat flour

So when I was making this I realized that the consistancey was really wierd, like play dough. I've never baked anything with a texture like that before so I added a little bit of almond milk but didn't change the texture too much. I left it in there for 25 minutes and it is seriously awesome.
I'm going to make a really big batch of this later tonight so I can use up the rest of my carrots.
