Caramelized Sugars Cake
Cake:
nonstick spray or oil
1 1/4 cup all purpose flour (Arrowhead Mills is excellent)
1/2 cup sugar
1 1/4 teaspoons baking soda
pinch salt
1/4 cup agave syrup
1/4 cup vegetable oil
2/3 cup vanilla non dairy milk (I use soy)
1 banana, mashed (I use organic)
1 teaspoon vanilla
1 1/4 teaspoons lemon juice Strawberry topping:
1/2 pound strawberries, washed and sliced
2-3 tablespoons sugar
1 tablespoon corn starch
3-4 tablespoons water
pinch cinnamon
1. Preheat oven to 350 degrees F, and spray a foil lined cake pan with oil. Note: this recipe is for one layer cake. In a bowl, mix the flour, sugar, salt and baking soda thoroughly.
2. Create a well and add the agave, oil, non dairy milk, vanilla and lemon juice. Before mixing, Add banana, and mix gently until homogeneous. Do not over mix. Pour the batter into the prepared pan and bake for 30-35 minutes or until a toothpick comes out clean. Let cool at least 10 minutes before serving.
3. For topping, in a sauce pan, place the strawberries and sugar. Mix the cornstarch into the water and pour into the pan. Bring to medium heat and cook for a couple of minutes or until you like the look of the strawberries.
*Sauce can also be made with blueberries, peaches, etc.

SO HOW'D IT GO?
I used this cake for my husbands birthday cake. He does not really care for plain cakes so i thought i would give it a try. Tasted great a little like banana bread. I only used the cake i did not make the strawberry topping but it looks really great. Thanks for sharing
