Bubble and Squeak

What you need: 

3 potatoes, unpeeled
4 cups cabbage, chopped
1/2 yellow onion, chopped
oil, as needed
freshly ground black or white pepper, to taste
salt, to taste

What you do: 

1. Boil potatoes until tender. Mash the potatoes.
2. Add the cabbage and onion. Mix together and form into patties by hand. Season, to taste
3. Fry over medium-low heat until golden brown on the bottom (1/2 hour). Invert onto a plate and serve with salt.
Delicious with a vegan beer and a green salad. Patties can be frozen and cooked at your convenience.
