Brown Rice Black Bean Salad
What you need:
1 cup cooked brown rice
1/2 cup rinsed black beans
1 medium tomato, chopped
1/2 avocado, chopped
3 green onions, chopped
1/4 cup cilantro, chopped, plus whole leaves for garnish
3 tablespoons cooked corn
3 tablespoons chopped green chilies
splash lime juice
salt, to taste
pepper, to taste
3 large red leaf lettuce leaves, chopped
What you do:
1. Except for lettuce leaves, mix all ingredients (rice, black beans, tomato, avocado, onions, cilantro, corn, chilies, lime juice, salt, and pepper).
2. Arrange lettuce on a place and top with rice mixture.
3. Garnish with whole cilantro leaves on top and a lime wedge on the side.

great recipe. i cooked the rice mexican-style by browning the rice first, then cooking with a little chopped tomato, cumin, chili powder and veggie bouillon. followed the rest of this recipe as-is and it was really yummy.
