Brown Rice Asparagus Casserole
1 cup brown rice
3 cups water
3 large portobello mushrooms, chopped
3 cloves garlic, crushed
3 tablespoons oil blend
1/4 cup walnuts
1/4 cup sunflower seeds
1/4 cup pumpkin seeds
1 bunch asparagus, lightly steamed and cut into 1-2" pieces
sea salt and pepper, to taste
dash curry powder
sprinkle turmeric, optional
dash lemon juice or balsamic vinegar, optional
1. Cook rice in rice cooker with water until done. Sauté garlic and mushrooms in oil on medium heat for 5-10 minutes. Don't let garlic turn brown. Mushrooms should be golden.
2. Add nuts and sauté another 5 minutes. Watch carefully to avoid burning the garlic or the nuts.
3. Combine mushrooms and nuts with rice, along with cooked asparagus. Season to taste and toss all ingredients.
Very, very delicious!
SO HOW'D IT GO?

I make variations of this very frequently and love it. I usually add tahini to make it "creamier" and hold in the moisture.
Made this tonight for the first time and served it with a "cheezy" nutritional yeast sauce. So good!
Just got done eating this and it was so delish! It was a quick meal to put together since I was able to use my rice cooker and steam the asparagus at the same time. I cooked the mushrooms and nut mix in a little bit of white wine and added some thyme. I will make this again.
This recipe is really good, we love the combination of spices, rice and nuts (not to mention the asparagus and mushrooms) ;)b yummy
This is yummy, my meat-eater husband also loves it. :)>>>
Thanks for great recipe ;)b
Wow! This was awesome! I added broccoli because it needed to be eaten. I used 2 TBSP canola oil and 1 TBSP olive oil. For the spices I used Thyme and Rosemary. Very easy to make. Thanks for sharing this recipe!
This recipe is de-lish-ous! I actually made a mistake and undercooked the rice - so it was pretty dry but it STILL tasted good - image how good it would've been if I cooked the rice properly!!! I added orange capsicum and broccoli. My favourite thing about this meal is the addition of nuts and seeds... I love it!
:) Made this last night and it was a big hit... even with my 18 year old meat loving teenager!! I am new to this site and so far I am really impressed with the range of recipes that are only a click away.
I made this a couple of weeks ago-- it was very tasty and hearty. Love it. I'm making it again this week!
