Bok Choi and Mushroom Pancakes

What you need: 

3 cups bok choi, shredded
10 button mushrooms, sliced
1 small onion, chopped
1 1/2 cup flour
3/4 cup water
1 teaspoon baking soda
1 tablespoon sugar
salt and pepper, to taste
oil for frying

What you do: 

1) Mix flour, water, sugar, and pepper in a bowl. Let stand for 10 minutes. Meanwhile, chop the vegetables. Salt bok choi and let it drain for 10 minutes.
2) Mix the chopped vegetables into the batter.
3) Drop dough by the tablespoon onto a heated, oiled skillet and fry on both sides until golden.
Serve with chopped herbs and sweet chili sauce.

SO HOW'D IT GO?

These were so good! i had some of my neighbors over and they all loved them, before i knew it they were all gone! One of my neighbors said with food like this it would be easy to be a vegan

These were excellent!  I served them to my elderly parents and semi picky DH and DD, and they were skeptical...but they got a thumbs up all the way around. My mother took the recipe home with her, and  I will be making these again soon.  I loved that they held together so nicely during frying.  These reminded me a bit of Korean buchingey.  We liked them best without the sweet chili sauce so we could savor the delicate flavors.  Thanks for a terrific recipe.

Oh! I assumed the baking soda was added in with the flour right?

Wow! These were amazing. I followed the recipe exactly and they were delish. A hug hit with the fam. I had some beautiful blue mashed potatoes to go with it along with some sweet and spicy relish. I should have taken a pic :( Thank you!
