Blueberry Banana Muffins

What you need: 

2 cups whole wheat flour (or flour of choice)

1/2 teaspoon salt

1 teaspoon cinnamon

2 tablespoon baking soda

2 tablespoon Stevia (or sweetener of choice, or 1 cup of Sugar)

1 tablespoon apple cider vinegar

1 cup of water (or non-dairy milk)

1 1/2 teaspoon vanilla extract

1 cup mashed banana (add another 1/3 cup if too dry)

1 1/3 cup blueberries (or as many as you like)

What you do: 

1. Preheat oven to 370F and prepare the muffin tray (liners or oil).
2.Combine the first 5 ingredients (dry) in one bowl and leave to sit while combining the vinegar, water, vanilla extract, and banana in another bowl. 
3. Form a well in the dry mixture and pour in the wet, combining the two. Add the blueberries to the mixture and stir until well-formed (careful not to break the blueberries!). 

4. Pour into the muffin tray, each 2/3 full. Bake for 20 minutes or until a toothpick comes out clean. Remove from the oven and leave to cool for ten minutes.
