Black Bean Casserole

What you need: 

1 can black beans (rinsed and drained)
1 medium onion (minced)
1 clove garlic (minced)
2 to 3 small zucchinis
2 cups whole kernel corn (frozen)
1 cup of your favorite salsa
1/4 cup chopped flat leaf parsley
3 tablespoons olive oil
salt and pepper to taste
vegan parmesan cheese (optional)

What you do: 

Saute the onion, garlic and parsley until the onion is transparent.
Cut zucchini in half lengthwise then in 1/2 inch slices.
Mix all ingredients together and pour in a greased 2 quart casserole.
Cover and bake about 45 minutes or until zucchini is tender.
Remove from oven and top with grated vegan parmesan cheese if desired.
Great served with a side of brown rice. Enjoy!

SO HOW'D IT GO?

I really like this! It's easy to prepare and pretty darn healthy. I also skip the cheese and don't miss it at all. I don't generally have fresh parsley around and just use dried.

One of my favorite recipes of all. The corn and salsa are what make it. I cook it at 350 for one hour and use two layers of Daiya cheddar cheese, on top and in the middle. It's also good wrapped in tortillas, like a burrito.

What temperature should we cook this at? Can't wait to try it. Sounds delicious. :)

this was delicious! i served it with brown rice and skipped adding the vegan cheese. definitely something i'll make again!
