Black and White Bean and Coconut Soup
3 tablespoons, olive oil
1 small onion, diced fine
1 1/2 teaspoons cumin
1/2 cup chopped fresh cilantro
1 teaspoon lime juice
1 teaspoon raw sugar (or agave nectar)
2 cans (15 oz) black beans*
1 can (15oz) white beans or black eyed peas*
1 can (15 oz) lite coconut milk
dash hot sauce or crushed red pepper-optional
* If you like a thicker soup (like me), strain the beans before adding.
Take one can of black beans and puree in food processor…set aside’
In large pot, sauté onion, cumin, cilantro, lime juice, and sugar in oil until onion is clear.
Add all beans and coconut milk.
Bring to a boil, the simmer on low for at least 20 minutes.
Serve warm.

This soup is tasty, full of fiber and EASY and FAST to make. Yum!
SO HOW'D IT GO?
Pretty simple to make. I'm sick and wanted something easy to make with the ingredients in my home. I like the tastes and I didn't have cilantro so I used Italian seasoning and added lots of cayenne pepper to get rid of my sickness. I also added less than a half cup of ditalini pasta.
