Best Veggie Burgers Ever

What you need: 

1/2 cup uncooked barley
1 cup soy cheddar cheese, grated
egg substitute for 2 eggs
3/4 cup bread crumbs
1 cup minced mushrooms
1/2 cup firm tofu
1 teaspoon pesto
parsley
salt
pepper

What you do: 

Cook the barley according to directions.
Put egg replacer, soy cheese, mushrooms, tofu into food processor and mix well.
Then add in bread crumbs, pesto, barley.
Form into burgers.
Spray pan with nonstick spray.
Cook burgers 5 to 7 min on each side.
The cooking and cooling of the soy cheese helps the burger "firm up".
