The Best Southern Brown Gravy
2-3 tablespoons oil or vegan margarine
1/2 onion, minced
2-4 tablespoons white flour, divided
1 cup water, more if needed
sea salt and black pepper, to taste
1. Warm oil in skillet. Saute onion in the oil until tender. Once the onion is tender, add the flour 1 tablespoon at a time until it is almost (but not quite) paste consistency; more like a chowder consistency.
2. Constantly stir with spoon or fork until flour turns light to medium brown in color.
3. Once flour turns the right color, add 1 cup water. Stir over medium-low heat until the mixture bubbles.
4. Add more water if it gets thicker than desired. Season, to taste.
Serve the gravy over toast, wheat biscuits, meat substitute, etc. This recipe may not be the healthiest, but it is wonderful if your looking for some good old fashioned gravy.

I added about 1 tsp of Gavy Starter in it as well, reallly good!
