Best Frosting Ever

What you need: 

2 ounces unsalted (or salt-reduced) vegan butter, soft
2 cups vegan powdered sugar
2 tablespoons fruit jelly or jam (raspberry or strawberry work best)
1 to 2 teaspoons vanilla extract

What you do: 

1) Beat the vegan butter spread in a small mixing bowl until it's a pale color. Beat in the fruit jam.
2) Sift the sugar twice. The vegan powdered sugar must be pure sugar, not frosting mix which contains cornstarch.
3) Transfer the jam mixture to a larger mixing bowl, and beat in the sugar a couple of tablespoons at a time. Add the vanilla extract and beat the mixture until very soft and smooth.
You can substitute 2 tablespoons of sugar with cocoa or use coconut liqueur or fruit schnapps instead of vanilla extract.

and just like that I suddenly make good icing - so thank you! This was real easy to make, and tasted awesome! I used a mixed berry jam, and I iced a batch of cupcakes. Yum.

This is amazing. And perfect for a natural pink frosting for baby shower cupcakes! :) It did turn out a bit thin for me... so more a layer of icing, not a mound of frosting - but it's sweet enough that a little goes a long way.

HOLY COW. So easy, SO DELISH.

I had to throw sugar in the blender because I didn't have conf. sugar, so mine was a bit gritty. I like that in frosting; all is well!

I used strawberry jam and peach schnapps and OH MY GOODNESS. It's amazing.

This frosting is so good ;)b. I put it on chocolate cake and I accidentally added to much jam so it was very pink and yummy :D

I made this today, but have not frosted anything yet.  The amount seems too small for a cake, but I'll have faith.  I added one drop of red food coloring to intensify the very pale pink color, and it's still very pale.  Used raspberry Polaner fruit spread and the taste is excellent, a delicate raspberry flavor!  So easy and quick, thank you!

I made this today for my friend's birthday. I doubled it, added strawberry preserves, used butter instead of margarine, almond extract instead of vanilla. PERFECT.

If anyone's wondering, the doubled recipe is the perfect amount for 36 cupcakes.

Fantastic! I put this on some vanilla cupcakes I also found on this site and it was a great combo. The jam I used was raspberry and I also took the suggestion of adding the cocoa powder to the mix. Thank you for the recipe everyone really enjoyed them

I thought this was super easy to make and very, very tasty! :)
I used a mixed berry jam from my local farmers market. I'll have to try this with some other flavors of jams/preserves!
