Beer-Battered Tofu Sticks with Ranch Dressing
Ranch Dressing:
1 cup vegan mayonnaise (I use Vegenaise)
1/3 cup vegan sour cream
1/4 cup unsweetened nondairy milk (I use almond)
1 tablespoon lemon juice
1 tablespoon dried or fresh chives
1 tablespoon dried parsley (or 2 tablespoons fresh, chopped)
1 teaspoon dried dill
1 teaspoon garlic powder
1 teaspoon garlic salt
1 teaspoon onion powder
1/2 teaspoon dry mustard Tofu Sticks:
1 (14 ounce) package extra firm tofu, drained and pressed
3/4 cup all-purpose flour
3/4 cup beer (preferably ale)
1 1/2 cups panko breadcrumbs
11/2 teaspoons salt
3/4 teaspoon paprika
1/4 rounded teaspoon black pepper
canola oil, as needed for the pan
1. Prepare the ranch dressing by combining all ingredients in a bowl. Mix until thoroughly combined. Set aside.Cut tofu into 3/4” wide sticks. Pat dry.
2. In a small mixing bowl, mix together flour and beer until smooth. In a separate bowl, mix together panko, salt, paprika and pepper. Heat 2 tablespoons canola oil in a large frying pan over medium-high heat.
3. Dip each tofu stick into the wet mixture, then the dry mixture, turning to coat all sides. Carefully place into preheated pan and fry until golden brown on all sides.
4. Add additional oil if needed. Using a slotted spatula, remove the tofu sticks and place on a couple of paper towels to remove excess oil. Repeat until all tofu sticks have been prepared. Serve with ranch dressing.

These were amazing! I loved the texture of the crispy outside and chewy inside. The ranch dressing was so tasty. The recipe made more than enough dressing so we also enjoyed it with something else. I love how the batter stuck to the tofu well, I haven't had much luck with this with other recipes. The sticks cooked really well in my grandmother's cast iron pan. Thanks, it's a keeper!
Yay! So glad you liked them, malibudrea! I've found that the ranch is excellent on salads and dipping other things into such as veggies or seitan sticks. It's even good in wraps. :)

I made these with regular breadcrumbs, because I didn't have panko. The tofu seems to be a vehicle to get this amazing ranch dressing into my mouth. I think the tofu sticks are pretty versatile. I saved the leftovers, and made sandwiches the next day with the tofu sticks, dressing, and some greens on whole grain bread. You could also serve the tofu sticks with some marinara sauce, and it would have a "mozzarella stick" kind of feel to it. I served the leftover ranch dressing with potato chips for dipping, and I still have some leftover. Thanks for the recipe!

I did not have beer, so I used buttermilk..using 1 TBL of vinegar with 1 cup of soymilk, and 1 egg replacer....it came out looking just the same. My kids loved it. I did marinate my tofu first however with braggs aminos, crushed garlic cloves, and some cajun spice & nut butter. Next time I will try with beer to see any difference...but these were great.
