Beans and Rice Curry

What you need: 

2 or 3 cups cooked rice
1 (15 ounce) can black beans
1 (15 ounce) can diced tomatoes
1 tablespoon curry paste (powder would work)
green onions, diced, optional
bell peppers, diced, optional

What you do: 

Add all ingredients to bowl, and mix.
Tasty at room temperature or heated up. Good for lunch, or as a stuffing for enchiladas.

SO HOW'D IT GO?

I couldn't stand the thought of another microwave lunch yesterday, so I printed this up, ran to the supermarket and threw it all together in the workplace kitchen. With instant rice, this took me a total of 5 minutes. It's delicious and apt to be a weekly staple for me. Thanks!
