Bean Soup

What you need: 

1 large can black beans
1 small can chick peas (cece beans)
1 small can red kidney beans
3 carrots
2 potatoes
1 large onion
3 cloves garlic
1 large green pepper
cumin, curry powder, Mrs. Dash, salt, pepper, bay leaf
oil
1 small can diced tomatoes
1 cube vegetable bouillon

What you do: 

Cook the onion, garlic, and spices in the oil in a large saucepan. Add the tomatoes and the bouillion cube. Cut the carrot, pepper, and potato into 1/2 pieces. Add the beans to the saucepan along with 1 small can of water. Add the veggies. Simmer the soup for about half an hour or until the potatoes and carrots are soft. I like it with whole wheat pita but you can do whatever you like. Enjoy!
