Bara Brith (Welsh Fruit Loaf)

What you need: 

1/2 cup vegan margarine
1/2 pound candied fruit: raisins, currants, chopped candied peel
1 cup strong tea
Egg replacer equivalent to 1 egg
1 1/2 cups flour
1/2 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon apple pie spice (or a blend of cinnamon, clove and ginger)

What you do: 

1) Preheat oven to 350 degrees Fahrenheit.
2) Melt vegan margarine and add tea and fruit. Bring to a boil and simmer 2 minutes. Cool. Place in mixing bowl and sift in dry ingredients and egg replacer, mix well.
3) Place in greased and floured loaf tin. Bake for 90 minutes or until done. This bread is very dense so it may need more cooking time depending on your oven.
