Banana-Nut Oatmeal Cookies

What you need: 

1/4 cup soy milk
1/4 cup safflower oil (or any light, mild oil)
1/4 cup brown rice syrup
1/4 cup maple syrup
1 cup rolled oats (not quick-cooking)
1/2 cup whole wheat flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 cup chopped walnuts
1 banana

What you do: 

These cookies are both healthy and amazingly delicious. With crispy edges and soft, chewy centers, they are best eaten while still warm. This recipe makes about 12-15 cookies but can easily be doubled.
1) Preheat oven to 350¢ªF. Coat cookie sheet with nonstick spray or oil lightly.
2) Stir the first four ingredients together until well blended, and then mix in the oats.
3) Sift the flour, baking powder, and cinnamon over the wet mixture, add the walnuts, and stir until well mixed.
4) Peel the banana, and cut into quarters lengthwise, then slice the strips into small cubes, and gently fold into the batter.
5) Drop large tablespoons of the batter onto the cookie sheet, and bake for about 25 minutes, or until the cookies are golden brown at the edges.

SO HOW'D IT GO?

Based upon what I already had in the kitchen, I had to make the following modifications: I used unsweetened vanilla almond milk rather than soymilk, corn oil instead of safflower oil, all maple syrup, and pecans instead of walnuts.  I only baked the cookies for about 20 minutes and they were still cooked through, probably just not quite as crisp around the edges as the original recipe intends (I tend to like softer cookies).  Mmmm--chewy, not too sweet...and I especially like that I don't have to resort to banana bread/muffins to use up bananas on the verge of over-ripening.  Thanks for posting the recipe.

I love this recipe and have been baking these cookies for 4 years - I follow the recipe exactly as it is written and the cookies turn out perfectly every time.

I really think it is worth noting that following the listed ingredients make these cookies a really healthy treat - low fat, nutritious and although maple syrup and brown rice syrup are sugars as such, they are more natural than using refined store-bought stuff. The only thing I occasionally change is the oil - I like to use Walnut oil - which is a very healthy alternative.

Excellent cookies.  Chewy and I love the banana taste.  I also tried some with chocolate chips.

I babysit and made them with the girls (they loved to mash up the banana).  Later, Mom, Dad, Grandma, Grandpa, and the girls were all devouring them.  And they're not vegan!

I find it funny how everyone doesn't use the exact recipe.  Myself included..I mean, who has brown rice syrup hanging around?  I didn't have the maple syrup either, so I just used white sugar for both.    :)>>>
