Bamiya - Armenian Okra and Apricots

What you need: 

2 medium onions, sliced
olive oil, as needed
1 1/2 cups vegetable broth
1/4 cup tomato paste
salt, to taste
juice of 1/2 lemon
3 large handfuls baby okra
15-20 dried apricots

What you do: 

1. Sauté onions in very small amount of olive oil until they turn translucent.
2. Add broth, tomato paste, salt. Bring to boil. Add lemon juice and okra.
3. Arrange apricots on top of all this. Simmer for 1 hour.
This is a nice side dish or can just be served with rice/salad as a main meal. People who don't like okra because of sliminess: it seems the longer you cook it, the less slimy it is. I have okra phobic friends who really like it.
