Baked Yams with Sausage and Vegetables

What you need: 

2 medium yams, washed and pierced with a knife 4-6 times
1 teaspoon vegan margarine
1 tablespoon olive oil
1 portobello mushroom, diced (or 6 mushrooms, diced)
1/2 small onion, diced
1/2 red pepper, diced
1/2 zucchini, diced
8 vegan sausages, sliced
3 to 4 cloves garlic, minced
1/2 teaspoon onion powder
1/2 teaspoon chili powder
1/4 teaspoon salt and pepper
1/4 cup vegan cheese, optional
1/4 cup vegan yogurt or sour cream, optional
1/2 avocado, diced, optional

What you do: 

1. Preheat oven to 400 degrees F. Wrap each yam individually in aluminum foil, and bake in oven for 45 minutes, or until knife inserted in middle of yam goes in really easily. When yams are done, transfer each one onto a separate plate.
2. Remove aluminum foil and slice each one lengthwise down the middle. Add margarine and mash the inside of the yams well with a fork.
3. Heat a frying pan on medium heat oil and add all the vegetables, vegan sausage, and dry seasonings.
4. Saute for approximately 10 minutes and then divide the mixture between the yam halves. Add optional ingredients, if desired, and eat!
