Avocado Tomato Salsa

What you need: 

1 avocado
4 plum tomatoes
2 scallions
1/2 lemon
2 cloves garlic, or to taste
1 jalapeno pepper - or to taste
1 tablespoon olive oil
sea salt
black pepper

What you do: 

The best way to make this is to coarsely chop up all the ingredients and put it into a food processor, then blend to the desired consistency. Cut the avocado in half lengthwise, remove the seed and scoop out the stuff from the skin. Put it into the processor. Chop up the tomatoes, scallions, including the green part, garlic cloves and jalapeno pepper. (adjust the jalapeno pepper to your taste - more or less depending how hot you like your food) For the lemon, I cut the lemon in half and removed the pulp from the skin and removed the seeds. Then I put the pulp into the processor. Begin processing, stopping a few times to check and add sea salt and pepper to taste. When it is of the consistency you want stir in the olive oil and serve with organic corn chips. Its also great on veggie burgers and sandwiches.
