Avocado Freezer Treat

What you need: 

1/4 to 1/2 cup raw cashews
1 ripe avocado, peeled and chunked
1 to 2 tablespoons liquid sweetener of choice
1/2 teaspoon lemon juice
1/2 teaspoon vanilla extract

What you do: 

In a food processor or blender, process cashews to a crumbly powder. Add remaining ingredients and process until smooth (will be thick). If it is somehow too dry, add a little soymilk. Taste and adjust sweetener as necessary. Pour mixture into popsicle molds or a freezer-safe container and freeze.
I usually let popsicles freeze at least 4 hours before I try them, but if you are using one big container, you'll probably want to stir the stuff occasionally so it doesn't freeze into a solid block.
For a creamier texture, you can try briefly blending/processing your frozen treats (non-popsicle version) before serving.
I enjoyed mine as a big solid block (still tasty) with some vegan chocolate chips sprinkled on top. Yum.
