Avocado and Tomato Pasta Salad

What you need: 

1 - 375g box of Rotini or other pasta (preferably multigrain)
1 large clove garlic, minced
2-3 tablespoons olive oil (optional)
2 plum tomatoes, chopped
1/2 - 1 small avocado, diced
1 green onion, chopped
Italian salad dressing

What you do: 

Cook, drain, and rinse the pasta. Add the remaining ingredients and toss.
Add Italian dressing to taste.
Best served chilled.

SO HOW'D IT GO?

A lovely recipe this one is.  It is light and delicious.  More avocado please.

this was good!  a simple recipe, a simple taste.  mmm.  i added just a little bit of vegan parm (nutritional yeast and almonds).  the dressing i used was homemade, apple cider vinegar, lemon juice, oregano and water.  yum!
