Artichoke & Angel Hair Pasta

What you need: 

1 box angle hair pasta
1 can (15oz) of diced organic fire roasted tomatoes
1 jar (6oz) capers
2 jars (8oz) marinated artichoke hearts
1 can chopped black olives
3 cloves garlic
1-2 tablespoons olive oil
1 bay leaf
1 tablespoon oregano

What you do: 

-Heat olive oil in pan over high heat for 2 minutes.
-Add garlic and sauté for another 2 minutes.
-Add tomatoes, bay leaf, and oregano and let cook for 5 minutes. Stirring occasionally.
-Lower heat to simmer and add capers, artichoke hearts, & black olives
-Let simmer for about 15 minutes
-Add Salt & pepper to taste
-While simmering prepare angel hair pasta following directions on the box.
-Serve sauce over angel hair.

SO HOW'D IT GO?

So easy and delicious.  I found that it needed a bit more flavor for my taste, so when I plated it I added some Italian seasoning to the top, and that did the trick.  Thanks! ;)b

The flavors in this dish are wonderful! Thumbs up from my whole family.  ;)b Also,it is incredibly easy and delightfully quick to prepare. The only problem with this recipe is that there isn't enough sauce for the whole box of pasta. Next time I will double it if making pasta for everyone again. I might also try some kalamata olives. YUM.

I don't think you can get fire roasted tomatoes here, so I just oven-roasted fresh ones with some olive oil in stead. I also roasted and skinned a red pepper that needed to be eaten and included that, doubled the garlic, and I topped it with a handful of toasted almond flakes - delicious!! I made extra with the intention of bringing it to work for lunch tomorrow, but, ehm... *someone* ate all of it over the course of the evening....

My family and I loved this!  It was so yummy.  I made it as directed, although I would double up the sauce recipe for the whole box of pasta next time.  Thanks!

Was looking for a quick meal to throw together so I had to modify some ingredients based on what was on hand. Used 2 cups of rotini in place of angel hair, kalamata olives, just a sprinkling of capers, and 2 ripe tomatoes instead of fire-roasted and it was still so delicious! Will definitely try it with fire-roasted tomatoes next time to see the difference in flavor.Thanks so much for this recipe, it's fantastic!  :)

;)b Mmm! So I don't even know what capers are so I left that out lol. I poured some olive oil and rosemary over some tomatoes and broiled them because I didn't have the fire roasted tomatoes. I love not having to shop before I make dinner so this was great! Yummy!

This was great!  I changed it some because I don't like olives and don't really know what capers are, so I added a jar of roasted red peppers and a whole bunch of red pepper flakes to make it spicy.  I don't eat artichokes very often, but this made me fall in love with them.  I will definitely make this a lot.

This is the best pasta ever!  I don't use capers, but I use extra artichokes and mushrooms... this is honestly the best pasta I've ever had, and it's really easy to make, doesn't take much time at all.

I wasn't crazy about this recipe. It was just ok for me, but as others have mentioned I think a pound of pasta is too much for this dish.  I also used double the recommended amount of tomatoes and it still wasn't enough for me. I love the artichoke/olive pairing though, they go together really well.
