Anarchy Chili with Cornbread Topping

What you need: 

1 tablespoon olive oil
1 large red onion, diced
salt, to taste
3 cloves garlic, minced
1 jalapeno, diced
1 large bell pepper, diced
1 (15 ounce) can corn, juice reserved or 2 cooked ears corn
2 large fresh tomatoes, diced
2 (15 ounce) cans red kidney beans, drained and rinsed
pepper, to taste
hot sauce, to taste
1 teaspoon cumin
1 teaspoon chili powder
1 (8-9 ounce) package corn bread mix

What you do: 

1. Saute onion on medium heat, and add salt, garlic, jalapeno, and bell pepper. Saute until soft but firm. Add corn (set juice aside), mix, and stir in tomatoes. Add beans, hot sauce, chili powder and cumin. Raise heat slightly, while stirring.
2. When it starts to boil, turn it down to simmer and cover for 2 hours, checking every 30 minutes to make sure it doesn't stick to the pan. Slowly add juice from the corn or water if it begins to stick to the pan.
3. Preheat oven to 400 degrees F (or temperature according to cornbread mix package). Prepare vegan corn bread mix according to directions.
4. Spoon chili into oven safe bowls, top with prepared corn bread mix, and bake according to package directions, or when corn bread is golden brown.
Tastes best when listening to anarchy punk music while eating.

SO HOW'D IT GO?

Best chili ever! I halved the recipe cause I was the only one eating. I added much more chili powder and cumin, oregano, basil, coriander, 2 jalapeños, cayenne pepper instead of hot sauce, frozen corn, and vegetable broth as needed. I didn't feel like waiting the extra time, so I just served homemade cornbread on the side, and with lots of Daiya "Cheese" on top.

I made this for a potluck, too.  This was super easy and quick.  I used my own recipe for cornbread chock full of corn, onion, and pepper.  I cooked it in one casserole dish.  As is, it's good though I eyeballed the measurements.  Room for taste adjustment which is always nice.

this is probably a really stupid question, but would it be just as good to stick in a casserole dish, cornbread topping on over that? and do you think it would be overkill to also serve cornbread on the side with another veggie as well? ???

casserole dish works fantastic! i'm going to be making this again either tomorrow or the following day and i am soooooo excited.  cornbread on the side wouldn't be overkill if you've got another wet dish on the plate (maybe some mashed potatoes mmm!) but it certainly is enough and gooooooooooooood!  much love.

i made this for a vegan potluck i put together with 12 very close friends... everyone loved it.  i did add a little tomato sauce and tomato paste to it and didn't measure the spices (i most likely added a lot more) and it turned out soooooo good.  the cornbread on top is absolutely genius! thanks!
