Amys Favorite Sweet Potatoes

What you need: 

4 medium sized yams
2 tablespoons margarine
2-3 large vidalia sweet onions, chopped
6 tablespoons light brown sugar
1 teaspoon ground cinnamon
2 tablespoons maple syrup
fresh ground pepper to taste

What you do: 

1. Preheat oven to 400 degrees F. Bake yams for about 1 hour. Make sure they are soft to the touch when done. In a nonstick saute pan, combine the margarine and onions. Let onions soften.
2. Add the brown vegan sugar, maple syrup, and cinnamon into the saute pan. Let it caramelize the onions.
3. When potatoes are done, peel off the skins (make sure you get them all) and put into a large serving bowl. Mush them up a little, add a little bit of margarine.
4. Take the onion mixture, drain, and pour them on top of the potatoes. Sprinkle with a little more brown vegan sugar, add fresh ground pepper, and you'll keep asking for more! Enjoy.

THESE WERE GREAT!!! I didn't drain the onion mixture. thanks for the recepie!

Pretty darn good.  I left the skins on (no reason to lose those nutrients) and didn't bother draining the mixture.  Not sure how long the onions were supposed to be cooked, though, as mine were still a bit crunchy...

This is a fantatstic sweet potatoe recipe!  I absolutely loved it!  I served it at a fall dinner party and it was the most complimented dish!
