Almond Cookies

What you need: 

1/4 cup oats
1 1/2 cup flour (I use whole wheat pastry or unbleached white)
1/2 cup ground almonds
1/2 teaspoon salt
1/4 cup oil
1/4 cup margarine
1/4 cup sugar
1/4 cup maple syrup
1/2 teaspoon vanilla
1 teaspoon almond
1/2 cup soy milk
1 1/4 cup sliced almonds

What you do: 

In one bowl, mix oats, flour, ground almonds, and salt.
In another mix oil, margarine, sugar, maple syrup, vanilla, and almond flours.
Mix wet and dry bowls together.
Add soymilk and mix.
Add sliced almonds and mix.
Spoon onto cookie sheets.
Bake in preheated oven for 12-17 minute at 375 degrees.
NOTE: the margarine and oil may be substituted or use 1/2 cup of one or the other (instead of 1/4 of each) ... if you substitute with applesauce or bananas, you may need to grease cookie sheets. The sugar may be omitted... but I highly recommend keeping the maple syrup... it adds allot to the flavor of the cookie.
