2 Cups (Dry)~ Rice Select Couscous
3/4 Cup~ Chopped Sauteed Pepper
3 Cups~ Chopped Sauteed Zucchini
1/4 Cup~ Chopped Scallions
2 Tablespoons~ Lemon Juice
1/4 Cup~ Extra-Virgin Olive Oil
1/4 Cup~ Red Wine Vinegar
SALT, PEPPER, BASIL
1. Cook Couscous in medium sized saucepan and follow the directions on the back of the container
2. Pour Couscous into a large mixing bowl and salt, pepper and basil to taste
3. Stir in red wine vinegar, oil, lemon juice, and scallions
4. Lightly drizzle olive oil on the zucchini and peppers and stick them in the oven at 400 degrees. Check on them and stir them every once in a while. They usually take about 30 to 40 minutes to cook depending on how well done you want them.
5. Mix it all together! ENJOY! :)
