3/4 cup almond milk
2 tablespoons ground flax seed
1 tablespoons vegan margarine
pinch salt
3 slices bread (white, wheat, whatever!)
Optional: Apple Pie Spice, Pumpkin Pie Spice, Cinnamon
1. In a microwave-safe bowl, combine almond milk, flax seed, margarine, and salt. Microwave in 45 to 60 second increments, stirring between zaps. When the consistency of the dredge is eggy but runny, it's perfect. If it's a bit too thick add water or nondairy milk to thin.
2. Heat a pan over medium heat.
3. Dredge your bread and place in pan; fry until golden brown on one side, then flip and fry the other side.
4. Top with syrup, cinnamon, or spice. Note: I used a bit of non-stick spray, but with a decent non-stick pan these shouldn't stick at all. This makes approximately 1 large serving. Double and Triple this recipe to your hearts content.
