1 1/2 cups cooked black beans
1 1/2 cups cooked brown rice
1/2 cup frozen corn, thawed
3 scallions, sliced
2 medium tomatoes, diced
1 cup diced cucumber
1 lime, juiced
Salt and pepper, to taste
1) Mix together black beans and rice in a large bowl. Add remaining ingredients and toss to combine. Enjoy!
