1 cup kale or collards, rinsed well and roughly chopped
2/3 cup alfalfa sprouts
1/4 cup sliced beets
1/3 cup sliced red, yellow, and/or orange bell pepper
1/4 cup sliced cucumber
1/3 cup fresh tomato wedges
1/4 cup sunflower seeds
2 teaspoons olive oil or 1 teaspoon sesame oil
1 tablespoon balsamic vinegar
2 teaspoons garlic pepper, or to taste
1) Arrange the washed and chopped greens on a plate with the alfalfa sprouts, and then add the rest of the vegetables and the sunflower seeds.
2) Mix the oil and vinegar together in a small bowl with the garlic pepper and whisk vigorously to combine. Pour over the salad. Serve immediately.
Variation: Add thin slices of clementines, tangerines, or oranges on top for a sunny citrus pop that will make you smile.
