2 – 15 ounce cans garbanzo beans
2 tablespoons olive oil
1 to 2 tablespoons lemon juice
2 to 3 cloves garlic
1/4 cup sundried tomatoes
7 to 9 leaves basil
Oregano, to taste
Salt and pepper, to taste
2 to 4 leaves collard greens
1/2 cup alfalfa sprouts
1) Prepare the hummus by placing beans, oil, lemon juice, garlic, and sundried tomatoes in a food processor and blend until smooth. Add basil, oregano, and salt and pepper and blend to combine. Taste and adjust seasonings as desired.
2) Wash and prepare the collard leaves by carefully removing the middle stem, leaving the remaining leaf halves whole. Spread hummus along one side of the leaf and top with sprouts. Fold or roll as desired and enjoy!
