1 1/2 cups flour
1/2 cup cocoa powder
1/3 cup instant coffee powder
1/2 teaspoon salt
1 cup sugar
1/2 cup vegan chocolate chips
1/2 cup vegetable oil
1/2 cup nondairy milk (I use soy)
1 teaspoon vanilla
2 teaspoons baking powder
1. Preheat oven to 350 degrees F and cover 2 cookie sheets with parchment paper. Mix all dry ingredients and form a well in the center.
2. Add wet ingredients and stir to combine. Knead the rest with your hands. Drop rounded tablespoons of dough onto the prepared sheets.
3. For smaller cookies, bake for 10 minutes, or 15 minutes for larger ones.
