4 ounces margarine
1 cup dried fruit, chopped and tightly packed (raisins, currants, candied peel, etc.)
1 cup strong tea
1/2 pound self-rising flour (almost 2 cups)
4 ounces brown sugar or panela
1 teaspoon baking soda
1 teaspoon mixed spice (pumpkin pie spice or similar)
1 egg replacer (http://vegweb.com/index.php?topic=7678.0 [1])
1. Preheat oven to 350ºF, and grease and flour a 7" pan. Melt margarine, add fruit and tea, bring to a boil, then simmer for 2 minutes. Let cool.
2. Sift dry ingredients together, then add egg replacer and boiled mixture, mixing well.
3. Pour into prepared pan. Bake for about 90 minutes.
If you can't get self-rising flour, for each cup flour add 1 teaspoon baking powder (not soda!) and 1/4 teaspoon salt.
