1 cup dried sweet fruit (raisins, dates, prunes, etc.)
1 1/2 cups boiling water
1 2/3 cup ground hazelnuts
1 cup ground rolled oats
1/3 cup ground flax seeds
1 1/2 teaspoons baking soda
3 tablespoons cocoa powder
stevia, to taste (see below)
1. Preheat oven to 350 degrees F. Soak dried fruit in the boiling water. Mix ground nuts, oats, and flax with the remaining dry ingredients.
2. Puree the dried fruit and water mixture. Stir the pureed fruit into the dry ingredients, and mix well. Pour into a 8" round or square cake pan.
3. I added chocolate chips on part for a little extra something for those who were eating sugar. Bake for 25 minutes (or until knife/skewer comes out clean).
Enjoy! I haven't used Stevia much, and I hear that every brand is quite different in its levels of sweetness. We have a white powdered kind (??), and it has its own tiny scoop which looks like maybe 1/16th of a teaspoon, or maybe even less! I used 2 of these scoops in my recipe. I've also heard it can have a bad taste if you add too much, we didn't notice a bad taste to my cake, so I guess it was ok.
