6 to 8 ripe tomatoes; blanched, peeled, and smashed
3 zucchini, peeled and chopped
3 stalks celery, chopped
1 green pepper, chopped
1 red pepper, chopped
1 jalapeno, diced
4 cloves garlic, pressed
1 (15-ounce) can chili beans or black beans
1 (15-ounce) can white kidney beans
1 (10-ounce) package mushrooms - chopped
1/2 cup fresh corn
1/2 teaspoon chili powder, or to taste
1/2 teaspoon garlic salt, or to taste
1/2 teaspoon onion powder, or to taste
1/4 teaspoon cumin, or to taste
sea salt, to taste
Add all ingredients to a slow-cooker; cook on low 4 to 6 hours (all afternoon). Great way to use up fresh produce and freezes well.
