5 small potatoes, cubed
1 beet, peeled and cubed
1 onion, chopped
pinch sea salt
3 cloves garlic, pressed
1 tablespoon nutritional yeast
1/2 teaspoon paprika
1 teaspoon oregano
1 tablespoon apple cider vinegar
2 cups lettuce, torn
1 cup sprouts
3-4 tablespoons sauerkraut
sunflower seeds, for garnish, optional
1. Put the potatoes, beet and onion in a pot with a small amount of water and a pinch sea salt. Cover the pot, turn the heat up to medium-high and bring to a boil.
2. Turn down to simmer for about 30 minutes, or until the potatoes and beets are tender. Press the garlic into the pot, and stir it in along with the seasonings and vinegar.
3. Turn off the heat, put the cover back on and leave for a few minutes for the flavors to merge. Arrange the lettuce on plates.
4. Top lettuce with the cooked vegetables, then the sprouts and the sauerkraut. Sprinkle a few sunflower seeds on top, if you like.
