1 (14-ounce) block firm light tofu, pressed and then crumbled (I use NaSoya)
4 stalks celery, finely chopped
1/4 cup vegan mayonnaise (I use Nayonaise)
1-1/2 teaspoons black salt (a.k.a "kala namak" - a pinkish-gray mineral salt)*
1 teaspoon prepared yellow mustard
3/4 teaspoon onion powder
7 drops yellow food coloring, or to taste (optional)
1. In a bowl, combine the tofu and celery.
2. In another bowl, mix together the mayonnaise, salt, mustard, onion powder, and food coloring. (I think it looks more appetizing and authentic when dyed yellow.)
3. Mix mayonnaise mixture into the tofu and celery. It's excellent on soft whole wheat bread with some iceberg lettuce.
* The black salt mimics the taste of eggs and makes this taste JUST like the real thing!!!
