1 cup quinoa
2 cups water
1/4 cup olive oil
1 lime, juiced
3 tablespoons chopped fresh basil
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh chives
salt and pepper, to taste
1. In pot (or rice cooker), place quinoa with water. Cook according to package directions, until all water is absorbed.
2. In a separate bowl, mix olive oil and lime juice. Transfer cooked quinoa into a serving bowl, and add the olive oil/lime juice.
3. Stir in the chopped fresh herbs. Salt and pepper, to taste. Serve chilled.
