1 cup flour
1 1/4 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/4 cup oil
1/2 cup sugar
1 tablespoon lemon juice
1 lemon, zested
1 teaspoon vinegar
1 cup nondairy milk (I use soy)
1 tablespoon vanilla
1 1/2 tablespoons poppy seeds
1. Preheat oven 350 degrees F. Mix together flour, baking powder, baking soda, and salt in a large bowl.
2. In a separate bowl, mix togther oil, sugar, lemon juice and zest, vinegar, milk, vanilla and poppy seeds.
3. Combine liquid ingredients into dry ingredients. Fill muffin tins about 3/4 full and bake 20 minutes.
