3 ripe bananas, mashed
1/4 cup coconut oil
1 teaspoon vanilla
1/3 cup cashews, pulsed in a food processor into sand-like powder (not cashew butter)
1/3 cup macadamia nuts, pulsed in a food processor into a coarse powder
2 cups quinoa flakes
1/2 cup unsweetened shredded coconut
1 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon salt
1/2 teaspoon ginger powder
2/3 cup dried tropical fruit, cut into tiny pieces (I use pineapple, mango, apricot and papaya)
1/2 cup semi-sweet chocolate chips
1. Preheat oven to 350 degrees F. In a large bowl, combine bananas, coconut oil, and vanilla.
2. In a separate bowl, combine cashew powder, macadamia powder, quinoa flakes, coconut, baking powder, cinnamon, salt, and ginger powder.
3. Add the dry ingredients to the wet ingredients and stir until they are completely combined.
4. Fold in the dried fruit and chocolate. Place heaping tablespoon-sized balls onto a large cookie sheet. Bake for 15 minutes.
I use quinoa flakes in this recipe instead of rolled oats, just to mix things up a little and add more protein. Quinoa flakes are kind of hard to find. I got mine at Whole Foods in the same aisle where you can find the oatmeal. If you can't find quinoa flakes, then rolled oats would work too, it will just give the cookies a very different flavor, but still good!
